Mercado to Table: A Regional Mexican Cooking Class

Discover Mexico’s regional flavors through ingredient, culture and craft

Begin your culinary adventure in one of Mexico City’s traditional public markets, where Chef Alfredo Chavez leads guests on a guided tour to select the freshest ingredients for the day’s cooking class. As you wander through colorful produce stands, local spice vendors, and family-run stalls, you gain an authentic taste of everyday life and insight into the essential ingredients that define Mexican cuisine.

From the market, guests move into a fully interactive cooking class where they will prepare a menu inspired by six culinary regions of Mexico: Oaxaca, Michoacán, Yucatán, Baja California, the Pacific Coast, and the Anahuac Valley. Each region’s dishes highlight traditional techniques and flavors, from rich moles and marinated meats to coastal seafood and heritage grains. Guests also craft their own cocktails, bringing a hands-on approach to both food and beverages.

The experience includes all food and an open bar (excluding wine), serving mezcal, cerveza, and aguas frescas throughout the class. Guests are encouraged to cook, taste, share, and explore the cultural context of each dish in a warm and collaborative setting.

Perfect for groups seeking a deep, immersive understanding of Mexican cuisine through both its ingredients and stories, this market-to-table experience is as enriching as it is delicious.
