The Scotch Pairing Journey: A SWMS Single Cask Experience

Discover the world of Scotch in its purest form with an exclusive SMWS (Scotch Malt Whisky Society) tasting experience. Founded in 1983, SMWS is globally celebrated for bottling rare, single-cask, single-malt whiskies chosen for their exceptional quality, character, and individuality.

In this three-hour guided tasting, guests will sample four unique flavor profiles, each drawn from a single barrel and bottled at cask strength, revealing a spectrum of aromas and complexities that only small-batch craftsmanship can produce.

To complement the whiskies, a four-course pairing menu has been thoughtfully crafted to enhance the distinctive tasting notes of each pour:

  • First Pairing: Charred oyster with kombu butter and lemon emulsion, paired with a fresh, mineral whisky carrying subtle saline notes.

  • Second Pairing: Seared foie gras on brioche with fig chutney and hazelnut dust, paired with a rich, honeyed whisky layered with dried fruit and vanilla.

  • Third Pairing: Herb-crusted beef filet with demi-glace, truffled potato cream, and sautéed mushrooms, paired with a sweet, fruit-forward dram.

  • Fourth Pairing: Dark chocolate sphere filled with caramel mousse, sea salt, pecan ice cream, and honey crunch, paired with an intense whisky with cacao, wood, and smoky undertones.
